Relatively high rainfall in winter and spring presented challenges to the winegrowing team. Summer, however, was cooler than average and so the grapes ripened slowly and in a balaned manner. The harvest began on September 8th, one week earlier than usual.
PRODUCTION METHOD
Integrated Production (SATIVA certified).
SOIL GEOLOGY
Granitic.
Following manual harvest, the whole grapes were pneumatically pressed. Decanted cold for 24 hours. Fermenteded in concrete vats, for 12 to 15 days.
Eight months on fine lees, 40% in concrete eggs and 60% in rectangular concrete vats, for 8 months.
