The agricultural year began rainy and colder than usual. July was warmer and drier, which hastened ripening. Milder August temperatures in conjunction with mid-month rain were key to restoring balance to the fruit. These conditions enabled the optimal level of ripeness and concentration, while preserving the region’s characteristic acidity. The harvest began on September 7th, one week earlier than usual.
PRODUCTION METHOD
Integrated Production (SATIVA certified).
SOIL GEOLOGY
Granite, sandy loam soil.
Following manual harvesting, slight maceration was followed by the pneumatic pressing of whole grapes. Cold decanted for 24 hours. Fermenteded in used barrels and in an oak tonel for 12 to 15 days.
Twelve months on fine lees in 500-litre French oak barrels and 2000-litre Austrian oak tuns, followed by six months in the bottle.
